Brekkie - Veggie Egg Tacos

Also, Happy International Women’s today to all of you beautiful souls out there! It’s definitely nice to have a day which acknowledges all of the sacrifices and changes that have been made over the years by strong a$$ females.

We are in a day and age where our future is open and bright. Therefore, I wish you the strength and power to follow every goals that you set for yourself and fully invest in the life the you choose to have throughout the years!

Okay, I went off on a slight tangent, but let’s down to these tacos now.


  • 2 - Corn Tortillas

  • 1 - Boiled Egg

  • 1 - Tofurky Veggie Italian Sausage

  • 30g - Spinach

  • 2 Tbsp - Green Salsa (Trader Joes)

  • 1/2 Avocado


  1. Boil your egg (I usually boil a batch to eat them throughout the week)

  2. I boiled my sausage as well. Let it cool and cut it in pieces.

  3. I warmed my tortillas on the open flame of my stove (Alternatives: Heat in the oven / Heat in a pan) If you decide to heat them on the stove. Be extremely careful and use tongs.

  4. Now its time for the fun part!

  5. Divide your spinach on your tacos

Bacon Avocado Omelet


Hello Hello again Beauty!

Welcome back to my little breakfast corner,

First up, we are going to dabble into the ingredients of this bad boy.


2 - Eggs (Salt & Cracker Pepper)

2 - Slices of Bacon

Half - Avocado

30g - Spinach

40g - Tomatoes


Sour Cream w/ Everything Bagel Seasoning (Trader Joes)

Green Salsa (Trader Joes)


How are you feeling today? Take a minute to acknowledge your thoughts and emotions today. If you’re feeling happy and content! Perfect! If not take the time to accept how you are feeling and the actions you need to take to improve your current physical or mental state.

Was that too deep for a breakfast recipe? lol Well, I just wanted to check in and make sure things are going well in your life. Okay.. Now let’s get to the instructions.


  1. I like to begin by chopping everything up before I start cooking.

  2. Therefore, Chop Chop :)

  3. Crack the two eggs and season then mix until both yolks are broken.

  4. Begin to cook your bacon in a skillet then once your bacon is almost ready.. Move over to the omelet.

  5. Heat and spray a pan. Place on medium heat.

  6. Pour in your eggs after the pan is nice and hot. Once the eggs are in lower the temp and allow to cook for 2-3 minutes.

  7. Once your omelet has reached your perfect consistency… Shake that bad boy onto a plate and then begin to add your toppings and fold.

I remember the first time that I tried to make an omelet, it was far from pretty, but still edible. Therefore, If this is your first time! You got this lol Happy Cooking gorgeous soul.

Ahi Tuna Egg Omelet

Here is a quick & tasty Brekkie omelette! 

Eggs are definitely a daily staple in my life... How about y’all? I’m not going to lie this omelette looks pretty legit lol. Anyways, Let’s get to the recipe and instructions.


  • 2 - Eggs scrambled and seasoned w/ salt & pepper 

  • 2oz - Ahi Tuna

  • 60g - Zucchini 

  • 50g - Cherry Tomatoes 

  • 40g - Spinach

  • Himalayan Salt 

  • Cracked Pepper 


  1. Scramble the eggs in a bowl + add your desired seasoning and place to the side.

  2. Cut up the zucchini and cherry tomatoes.

  3. I used pre cooked ahi tuna from the night before.. Leftovers for the win :) 

  4. Heat two non stick skillets and spray in your oil of choice. I usually add a little oil because some non stick skillets like to fight back.. Am I right? One on medium heat and one on low heat.

  5. *I usually use a pan close to the size of my desired omelet.

  6. Add your eggs to the low heat pan and swirl around until the pan is entirely coated with egg gold.  Allow the eggs to cook for about 2 minutes until slightly runny and then place a lid over your eggs for another 2-3 minutes to steam and cook the top part.

  7. While you are waiting for the eggs, add the zucchini and ahi tuna (or meat of choice/ non meat) to the medium heat pan + your seasoning of choice.

  8. Saute the veggies and meat while the omelet is cooking.

  9. After the omelet is cooked, I like to slide it onto a plate and then place my ingredients on top of one half.

  10. I added the cherry tomatoes at the end for a nice fresh element. If you rather them to be cooked, throw them in with the zucchini and meat.
